Available in fresh, segmented bulbs, composed of individual cloves, garlic is available in any grocery store produce department, or vegetable stand. It is a member of the Lilly family, genus allium, which also includes onions.

But here's why it's a health promoting powerhouse.

Garlic contains the substance alliin, an odorless, colorless, sulfur-containing compound, derived from the amino acid cysteine. Through the chemical action of the enzyme allinase, alliin is converted to the active compound, allicin, when the garlic bulbs are crushed, or cut.

Allicin is responsible for garlic's most potent health and healing properties, as well as its very distinctive pungent odor, but it is poorly absorbed by the body. Its potency is also decreased by heating (i.e., cooking) and it is actually destroyed by microwaving. Since this active compound is so easily degraded, the more you have on board, the better.

Diallyl sulfides are less powerful sulfur compounds in garlic that can survive the heat of cooking, do not degrade as easily, but lack the antibacterial and antifungal properties of allicin. However, they DO retain the ability to lower total and bad (LDL) cholesterol levels.

Healing properties of garlic

Garlic has a number of cardiovascular protective properties:
• It can lower total cholesterol levels, as noted above;

• It may reduce high blood pressure, to some degree;

• It stimulates nitric oxide production (which promotes vascular health and function and enhances circulation);

• It displays antithrombotic, anti-platelet aggregation, anticoagulant, and increased fibrinolytic activity effects. In other words, garlic "thins" the blood and diminishes the risk of abnormal blood clotting.

• Garlic contains Vitamins A and C, as well as the mineral selenium, and therefore, it has intrinsic antioxidant properties. These antioxidant properties are increased in aged garlic extracts. These antioxidant properties have a role in garlic's heart protective effects, because it is the oxidized form of LDL cholesterol that forms arterial plaques, and narrows the interior of the arteries, the known pathology of atherosclerosis.

• In addition, garlic helps to prevent heart disease, both by reducing arterial plaque formation, as mentioned just above, and by lowering serum homocysteine levels (a metabolic compound that initiates arterial damage and plaque formation). One study of 152 subjects, in the Journal of Atherosclerosis, showed that the growth of arterial plaques slowed by 5-18% and in some individuals, the plaques became smaller.

• Garlic also decreases the output of inflammatory cytokines (chemicals that promote inflammation) and C-reactive protein (CRP, a nonspecific blood marker of inflammation), so it has natural anti-inflammatory effects which play a protective, preventive role in heart disease, since it is acute inflammation and subsequent white clot formation in a previously narrowed, atherosclerotic coronary artery that precipitates a heart attack (myocardial infarction).

• Garlic can also help to chelate (chemically bind and remove) toxic heavy metals and protect cells against DNA damage.

More controversial are claims that garlic can help lower elevated blood pressure and some evidence (though NOT PROOF) of a beneficial effect and reduced risk of some cancers, especially of the gastrointestinal tract.

Its small, but statistically significant cholesterol lowering effects are real, but short term (at one month), and are apparently not maintained at six months, for unknown reasons. BUT...
